With a team of four sommeliers, Head Sommelier Pierre-Marie Faure offers a personal, tailor-made wine service that is friendly and accessible, yet always knowledgeable and professional. The wine list at Alain Ducasse at The Dorchester evolves constantly, meeting the expectations of the cosmopolitan London marketplace where customers are open to new wine experiences. It reflects the excellence of French vineyards with 86% of the list originating from France. The remainder of the list is 10% from the rest of Europe and 4% from the New World. One section of the French list illustrates the great classics and is organised by vineyard - Chablis, Meursault, Puligny, Chassagne – and is then broken down by Premiers Crus and Grands Crus. Within the red Burgundy section, the Grands Crus are all featured, and a section is dedicated to the most exceptional wines Romanée Conti and Maison Leroy. The following section features some lesser-known wines to be discovered from Bordeaux, Burgundy and the Rhône. From the rest of Europe, there are many great classics from Germany, Austria, Italy and Spain. The short New World selection also features many complex and elegant appellations. There is an exceptional Champagne list of more than 80 selections, with a choice of four Champagnes offered by the glass, in addition to six sweet and fortified wines. The stylish Champagne trolley, designed by Jouin Menku, is constructed in light wood, leather and Corian, and is presented at each table at the beginning of the meal.
